Soup's On!





Dear Hearts,


In several parts of the country, temperatures are beginning to cool. We have less daylight from week to week . . .


. . .and [vigorously rubbing palms together] you know what that means!!


Yep! One pot meals. Soup, stews, chili, perhaps a lasagna or other favorite casserole.


Bust out those Instant Pots (or get one here) and get crack-a-lackin'!


There's nothing better in the "berrr months" than getting comfortable with a luxurious throw blanket, a good book to read (or write! . . .even better!), and the savory aroma of a pot of yumminess wafting throughout the house.


OK, so those of you who know me, are well aware of my cooking skills -- or lack thereof. So quit laughing because I came across a fun easy soup recipe even yours truly can't mess up.


Pay attention, Dear Hearts! I'm about to share.


Now, I will warn you. It's a weird one (on paper, anyway). But trust me, it's delicious . . .and healthy!


It's called "Oat Soup". Yes, I said it. Oats! . . in soup! Here's what you'll need (one serving portion. multiply as needed): Organic bone broth of your choice (Organic vegetable broth for vegetarians): 1 and 1/2 cups

Green and / or red bell pepper: amount to taste, diced

Onion: amount to taste, diced

Organic Steel Cut Oats:1/4 cup

Organic riced Cauliflower: 1/4 cup

Organic riced Broccoli: 1/4 cup

Savory seasonings of your choice: suggest turmeric, parsley flakes, cilantro, dill, herbs de provence, oregano, sage, garlic -- just a pinch of each

Salt: a dash

Black Pepper: a dash


Here's what you'll do:

  1. Sautee diced green / red pepper and onion in grass fed butter in a skillet.

  2. Add riced broccoli and cauliflower (I use already riced frozen. Don't judge me. I'm all about convenience), sauteed vegetables, and seasonings to broth.

  3. Bring mixture to a boil.

  4. Add Steel Cut Oats.

  5. Simmer for 25 minutes, uncovered, occasionally stirring.*

*Optional: Add beef or chicken (cook it in your new Instant Pot while the above mixture is simmering).


And ET VOILA!!


If you're not one of those carb-haters (and honestly, Dear Hearts, who is? Show of hands unnecessary. Now, put 'em down), serve with a nice warm chunk of Dutch Crunch bread.


Now, grab your new throw, your favorite book (I hope it's one of mine! LOL) . . .
